Fishmonger Bitter Heart Ale
Well, today is bottling day for the beer I brewed in the last week of 2005. After brewing there were two weeks of fermentation, followed by racking off into a conditioning carboy. There followed two weeks of conditioning before bottling day was reached. The stuff is rather tasty at this point, thought not as bitter as I like. This was a conscious decision, since most people don't like their beer as bitter as I do, and I'd like to be able to share with friends and relatives. I was surprised at how carbonated the beer was already - moreso than beer delivered from a beer engine, I'd say. Of course, this stuff is at cool room temp (say 65 deg F), while beer engines tend to deliver beer about 10 degrees cooler, I think. That temp would slightly suppress the carbonation, I'd guess. Anyway, the carbonation level will be somewhat higher now that it's sealed away with a touch of sugar for... let's see... two weeks takes me to February 12th. Then, a day or two to chill, and it'll be Valentines Day! Well, that calls for a change in name, I'd say. I think I'll call it... Fishmonger's Bitter Heart Ale. Now, to cross my fingers that I don't get exploding bottle syndrome!
